Pasta Paayasam

Pasta is a favorite evening time quick snack, but it can also be a quick desert that can served immersed in milk as an Indian desert Kheer.



DATABASE OF INGREDIENTS

This needs the following ingredients

•     Milk 
•     Boiled pasta
•     Powdered Almond
•     Crushed Cardamom
•     Chopped Coconut
•     Chopped dry fruits of your choice
•     Jaggery Syrup
•     Ghee
•     condensed Milk(optional)


ALGORITHM FOR PREPARATION

•       First roast the pasta in ghee till golden brown.
•       Add milk, crushed cardamom to the pasta and let it boil. You can also add condensed milk after          the mixture boils.
•       Meanwhile, warm up some ghee and roast first chopped coconut and then dry-fruits of your                choice.
•       As soon as the mixture is having a creamy consistency add crushed cardamom and jaggery                  syrup.
•       Lastly, add the warm ghee mixture of coconut and dry-fruit.


GARNISHING

•       Add a sugar art or caramelized sugar on the top.
•      You can also keep some ghee roasted coconut or dry fruits.


TIPS

• Make sure you do not burn the jaggery syrup.       
• You can also add rice powder for a thicker consistency.

Lilac Rice Delight

Food that fills the soul is the best food. Here's a quick recipe that will brighten up you up after a hectic day at work.   





DATABASE OF INGREDIENTS
This needs the following ingredients

•     Finely chopped Red cabbage  
•     Basmati Rice
•     Tumeric powder
•     Red Chilli powder
•     Garam Masala powder
•     Finely chopped tomatoes 
•     chopped onions 
•     Finely chopped ginger and garlic 
•     Few green chilies finely chopped
•     Mustard seeds
•     Cumin seeds
•     Coriander leaves    
•     Salt to taste
•     Vegetable oil


ALGORITHM FOR PREPARATION
•       First in a cooker, crackle some mustard seeds, add cumin seeds and saute red onions. 
•       After onions turn translucent, add all the spice powders.
•       As soon as the mixture is roasted add tomatoes and red cabbage. 
•       Cook the cabbage till they lose the stiffness.
•       Now add washed Basmati rice with required quantity of water and cook till one whistle.


GARNISHING
•       Serve this with some curd and finely chopped coriander leaves.


TIPS 
• Make sure you give a stir to the cooker as soon as the steam leaves for non-sticky rice.             
• You can present this with a vegetable or boondi raita.

Indian Deviled Eggs

Eggs are the most wholesome food around which can stimulate our taste bud in many ways. Here is a healthy mouthwatering Indian version of  The Deviled Egg dish.




DATABASE OF INGREDIENTS

All you need are the following
• Eggs
• Onions
• Garlic finely chopped
• Ginger finely chopped
• Green Chilies finely chopped
• Curry Leaves
• Mustard Seeds
• Curry Leaves
• butter
• Salt to taste


ALGORITHM FOR PREPARATION

• Boil eggs and cut into half.

• Separate the yolks and mash them.

• In a frying pan, crackle some mustard seed in butter and saute curry leaves, garlic, ginger and onions.

• Cook this until onions turn transluscent.

• Now add the mashed yolk and stir to turn it into a consistent mixture.

• Put this mixture into the boiled whites.


GARNISHING

• Add some coriander chutney on top.

• Can also sprinkle fried onions.


TIPS

• You can add some mayonnaise or sour cream in the yolk mixture.

• Served best as a starter.

Litchi Kheer with Caramel Crispies

Litchis one of the most luscious fruits available. Here is a litchi kheer recipe with no oil




DATABASE OF INGREDIENTS
All you need are the following

Litchi
Milk
• Sugar
Rice powder
Pine nuts, almonds,or any nut of choice(optional)

ALGORITHM FOR PREPARATION

First in a pan boil litchi for 4 minutes and keep the water.
Now mix the rice powder with the water in which litchi was boiled, make sure there is no lump formation.
• Cook this mixture and add milk till required consistency.
When the mixture is cooked, add sugar to taste.
Now add the litchis.  
• You can add some nuts if you wish.


GARNISHING
Add caramel crispies on top.
• Can have some candied nuts with this.



TIPS
Make there is no lump while making rice powder paste.
• Be cautious while making caramel crispies, it easily burns.
• You can also add sweet condensed milk to this.
• Served best when chilled.

Curd Rice

During summers the most sought after food is definitely the soothing yogurt, and a soul filling curd rice is the best option to relish rice and yogurt together. Here is a very simple recipe for curd rice which can be prepared very easily.



DATABASE OF INGREDIENTS
This needs the following ingredients

Pre-cooked rice
•       Fresh Yogurt
•       blach mustard seeds
•       Toor dal
•       Asofetida
•       Curry leaves
•       Pomegranate
•       Salt to taste
Vegetable oil


ALGORITHM FOR PREPARATION
•       First crackkle some mustard seeds, add Toor dal and asofetida powder.
Now quickly add some Curry leaves and them the pre cooked rice.
Now toss This rice mixture and evenly distribute.
After evenly distributing rest the mixture to cool.
Now add the curd and mix it evenly till it reaches your desired consistency.


GARNISHING
•       Serve this with some fried curry leaves and pomegranate.


TIPS
Make sure after the mixture cools.            
You can also add grated ginger, chillies or any experiment you wish to do.

Avocado Salad

Salads are said to be the healthiest dish to include in your diet. In India, salads generally include cucumbers, tomatoes and carrots simple sliced and tossed together with some lime juice served as a complementary dish. But a salad can be wholesome and satisfying as well, so here's a healthy avocado salad recipe.



DATABASE OF INGREDIENTS
This needs the least ingredients any dish can use
1. For salad
Avocados 
Onions
•       Tomatoes
•       Cucumber
•       Coriander(Finely chopped) 
•       Chia seeds

2. For dressing
•       Extra virgin olive oil
Salt 
Lemon juice
•       Black pepper powder



ALGORITHM FOR PREPARATION
•       First dice up the Avocados, cucumber and tomatoes into bite sized pieces.  
Roughly slice up the onions and the finely chopped coriander.
Now toss these ingredients with olive oil and lemon juice.
Add salt to taste and some pepper powder. 
For some crunch throw in some Chia seeds and enjoy.


GARNISHING
•       Serve this with some minty curd.


TIPS
Make sure the ingredients are not stale since that will take away the crunchiness.              
You can also add some seeds such as pumpkin seeds.

Paneer & Coleslaw Sandwich

Sandwiches are the easiest to prepare snack, but with a little effort this can be turned into an wholesome meal as well. Here's my recipe for a wholesome sandwich. 


DATABASE OF INGREDIENTS
All you need are the following

Tomato ketchup
Bread

1. For Coleslaw
Greek yoghurt
Vegetables(Cabbage, green papaya, carrots, cucumbers, capsicum, onions)
Salt to taste
Black pepper powder


2. For Paneer bhurji
Cottage cheese
Onions
Tomatoes
Green chillies


3. For Chutney
Coriander
Mint
Onion
Chillies
Salt to taste
Tomatoes
Yoghurt 


ALGORITHM FOR PREPARATION 
First of all put all of the ingredients in a mixer and make a smooth chutney.
Then prepare paneer bhurji by sautéing some onions, green chillies and tomatoes,then add roughly grated paneer with required amount of salt.
Now for coleslaw, in a bowl add shredded vegetables, greek yoghurt, black pepper powder and salt to taste.
For the final preparation of the sandwich, take three slices on one of the sections apply ketchup and stuff this part with the prepared coleslaw.
On the other section apply chutney and fill it with paneer bhurji.
Now simply grill this by applying some butter.   


TIPS
You can use mayonaisse in place of greek yogurt. 
Make sure bhurji is not too wet.
•       You can use any other dry dish in place of paneer bhurji.
