With the onset of winter, markets are flooded with custard apple or seetafal. This beautiful fruit has such a unique taste and texture that it simply melts in your mouth.
For all the seetafal lovers here's a recipe to enhance the custard apple flavour.




DATABASE OF INGREDIENTS
All you need are the following
Custard apple/Seetafal
Almonds, Pistachios or any nuts
• Saffron
Crushed cardamom
Tinned condensed milk
Sugar

ALGORITHM FOR PREPARATION
First of all Deseed the seetafal since it is tedious job.
Pour your milk in a heavy bottomed pan and bring it to a boil.
• Add crushed cardamoms or saffron strands.
Now for a fast track method for the thickening of basundi add some condensed milk.
Add sugar to your taste preference.
• Add some chopped Nuts.
• Keep on flame till your required consistency.
• After the consistency is reached turn off the flame and then add your custard apple pulp.





GARNISHING
Sprinkle some chopped nuts.
• Place a small amount of custard pulp.

TIPS
For the trademark brown color of Basundi put the sealed condensed milk tin in pressure cooker for     upto 10-15 whistles and add this.
Do not put the pulp while still on flame, it will lose its texture.
• While on flame keep on scrapping the bottom and sides of your pan.
• Do not walk away while preparing this dish, I repeat do not walk away =P.
