Gajar Halwa with candied nuts and caramel mesh

The favourite form of carrots is undoubtedly in the form of halwa. Here's my twist to the undisputed king of halwas.




DATABASE OF INGREDIENTS
All you need are the following

Carrots
Milk
•       Sugar
Crushed cardamom 
Pine nuts, almonds,walnuts or any nut of      choice
•       Clarified butter or ghee



ALGORITHM FOR PREPARATION 

1. For halwa
First grate the carrots.
Now in a pan pour some ghee with the carrots and roast for a while.
•       After that add milk and crushed cardamom.
Keep on sim and cook until all the liquid is absorbed and becomes thick.
Add sugar to your tase preference.

2. For caramelised nuts     
•       Take some nuts of your choice and dry roast them. 
•       After that Take athich bottomed pan and take some sugar and melt it.
•       As soon as the sugar caramelises add the roasted nuts.




GARNISHING
Make a beautiful caramel mesh. 
•       Grate some gried coconuts.

TIPS
Accompany this with a scoop of vanilla       icecream, it's YUMMM. 
While selecting carrots make sure they are sweet since many varities are available.
•       Be cautious while making caramel, it easily burns.

•       You can also add sweet condensed milk to this.
